​Beet Greens with Apples and Onions

Beets are abundant at the market this time of year, but what do you do with all those beet greens? Instead of tossing them straight onto the compost pile, why not give them a chance to shine as a side dish for grilled chicken or pork? Liven up that Summer meal with something new and unexpected!

Ingredients
  • 2 tablespoons of Tuscan Olive Oil
  • 2 garlic cloves
  • 1 apple, sliced thin
  • 1 red onion, sliced thin
  • 4 cups (1 bunch) of beet greens
Optional
  • Drizzle of honey
  • Goat cheese
  • Handful of chopped walnuts

Directions
  1. Remove greens from the beets and cut off stems.
  2. Chop greens into 1 or 2 inch pieces and wash in a salad spinner or place them in a large bowl with water and let sit for 5 minutes. The sand/dirt will fall to the bottom.
  3. Remove the greens and dump the water and repeat until all the greens are washed.
  4. In a large sauté pan, heat olive oil and cook the garlic, onion and apple until tender, about 2 minutes.
  5. Reduce the heat to medium low and begin to add the greens. Place all the greens in the pan (they will cook way down) and cook for about 10 minutes or until greens begin to wilt. Carefully stir and cook another 5 minutes.
  6. Top with walnuts, drizzle with honey and sprinkle with goat cheese, if desired.
